A woodblock print of a skipjack tuna from the 1822 culinary guide, Handbook of Fashionable Cuisine for the Epicures of Edo, by Kuwagata Keisai.
This woodblock print originates from the 'Edo ryūkō ryōri tsū taizen', a culinary guide published in 1822. Kuwagata Keisai, also known as Kitao Masayoshi, was a versatile artist who transitioned from the ukiyo-e school to a more simplified, observational style. This specific plate depicts a skipjack tuna, rendered with a focus on anatomical clarity and economic line work.
The composition is typical of Edo-period instructional texts, where the subject is presented alongside calligraphic text that provides context or poetic commentary. The artist employs a minimalist approach, using thin, controlled ink lines to define the form of the fish, while subtle colour washes provide a sense of volume and texture. The inclusion of the artist's seal and signature confirms the work's provenance within his later career, during which he produced several volumes documenting the natural world and daily life in Japan.
Keisai's approach to this illustration reflects a shift towards a more direct, almost scientific observation of nature, moving away from the highly stylised conventions of earlier ukiyo-e masters. The balance between the negative space of the paper and the precise placement of the subject creates a clean, graphic quality that remains visually engaging today. This print serves as a record of both the culinary interests of the period and the technical capabilities of woodblock printing in the early nineteenth century. The paper retains its aged, warm tone, which complements the muted ink palette used for the illustration. It is an example of how functional, educational material was elevated through the skill of a master draughtsman, resulting in a work that functions as both a historical document and a piece of graphic art.
